Pull Apart Monkey Bread
Ingredients:
2 cans biscuits (7.5 oz each)
3/4 c. Sugar
1 Tbsp Cinnamon
1 stick butter or margarine, melted (1/2 c.)
1 tsp vanilla extract
4 oz cream cheese, softened
1/2 c. powdered sugar
1 tsp vanilla, lemon or orange extract (whatever you like)
1 - 2 Tbsp Milk
Preheat oven to 350 degrees fahrenheit. Generously spray or grease the inside of a bundt pan. Working with one can of biscuits at a time and using kitchen scissors, snip each biscuit into quarters and set aside. Mix cinnamon and sugar together and toss biscuit pieces into it, thoroughly coating them. Place into prepared bundt pan. Mix the teaspoon of vanilla extract with the melted butter and drizzle half of the butter over the biscuit pieces in the pan. Do the exact same steps with the second can of biscuits, and drizzle remaining butter of the top. Sprinkle with any leftover cinnamon sugar on the top. Bake for 35-45 minutes or until toothpick inserted in middle comes out clean. While bread is baking, prepare frosting to spoon onto the top. In a medium bowl, combine the cream cheese, 1 teaspoon of your favorite extract (lemon is especially nice) and the powdered sugar. Using an electric handheld mixer, mix to combine thoroughly. Add 1 to 2 teaspoons of milk to loosen the cream cheese mixture enough to the consistency you think you'd like to spoon over bread. When bread is done baking, take out of oven and cool for 5 minutes before inverting onto a plate or platter. Immediately spoon frosting over the top so that it will run down the sides. Serve hot. So delicious!
